The southern fried tradition traces its roots back to the 1700s, when Scottish immigrants travelled to the American South. With them, they brought the old tradition of deep frying chicken, which quickly caught on in the region. But the actual southern fried taste can be attributed to the African slaves, who put their own spin on the crispy chicken with their spices from the West African kitchen. This became so popular that African women, in spite of the slavery, started to sell them in the 1730s.
